Spring cocktail recipe – Acquafredda

The warmer weather and longer days mean spring has officially arrived. This is the perfect time to visit us in Fowey – it’s the best opportunity to enjoy the warm Cornish climate without the county being too busy.

Here at The Old Quay House, we think it’s hard to top the feeling of sipping on a refreshing cocktail whilst sat in the sunshine, especially on our terrace overlooking the estuary. Acting as a sun trap, the terrace is the perfect place to enjoy a delicious drink, made by our in-house barman, Alessandro Acquafredda. 

Alessandro has created some great cocktails for you to enjoy this spring. Below, you can find the recipe for our Italian signature classic, The Acquafredda. Invented by Alessandro, The Acquafredda was first served at The Old Quay House and remains a favourite.


2 oz Ryka Vodka

1 oz Aperol

½ oz elderflower cordial

10 ml squeezed lime juice

Two lime slices

1 piece of ginger, cut into small strips

Ginger beer

How to make an Acquafredda

  1. Combine ginger, lime slices and Ryka vodka in a glass shaker and muddle.
  2. Chill a glass with ice and pour the muddled ingredients into it.
  3. Next, pour in the elderflower cordial, ginger beer, Aperol and squeezed lime.
  4. Garnish with a ginger slice and grate lime rind on top.
  5. Enjoy!

Cocktails on the terrace at The Old Quay House can be enjoyed from 12.30pm until 5pm alongside lunch and snacks, with evening drinks served from 6pm.
