Celebrated on the 25th January every year, Burns Night is held on the birthday of Scotland’s most famous poet, Robert Burns. As well as commemorating Burns’ life, the celebrations are also held in honour of his contributions to Scottish culture – his best known work is Auld Lang Syne.
A tradition, which has modest beginnings, started a few years after Burns’ death in 1796 when some of his friends came together to celebrate his career. Two centuries later and it has now become a nationwide event, with recitals of the poet’s works and a haggis dinner.
Our Scottish-born head chef, Richard Massey, moved to Cornwall from the Isle of Skye two years ago. Richard brought with him a modern twist on classic dishes, and since he began working as the hotel’s head chef, we’ve been hosting our own take on the Burns Night celebration.
The evening features poetry reading, a delicious seven-course Scottish feast prepared by Richard, whisky pairing, and is finished with a rousing rendition of Auld Lang Syne.
Richard taps into his Scottish roots to create a refined take on classic dishes, including a modern adaptation of kedgeree, Cullen Sink – a traditional soup – and whisky cured salmon. Each course is carefully paired with a matching Glenmorangie whiskey.
“I’m always excited to create refined versions of very traditional Scottish food. You can expect to see haggis, neeps and tatties, kedgeree, stovies, and of course cranachan to finish, but each presented in my own style,” says Richard.
“The vast range of flavours found in whiskies make them ideal for food pairings. The kedgeree, for example, has a strong smoked haddock flavour, so it needs a light and refreshing whisky to go with it.”
Our Burns Night is open to everyone, and we’ve seen a range of guests join us, including whisky aficionados, Cornish-based Scots, locals, and those who were staying at the hotel.
The cost is £55 per person, including seven courses and whisky pairing. A special room rate is also available, from £99 per room, including breakfast.
